These delicious, gooey, healthy brownies can be enjoyed warm from the oven or straight from the fridge or freezer.
They are paleo, vegan, refined sugar-free, dairy free and extra nutritious due to the beets.
They are super easy to make and make a wonderful desert with a dollop of coconut icecream or a great treatĀ for the kids.
Choose gluten free baking powder and soda to make these brownies gluten free
Ingredients
- 2 tbsp. ground flaxseed or chia seed
- 6 tbsp. water
- 4 small beets roasted and chopped (about 1 1/4 cup pureed)
- 3 tbsp. coconut oil
- 1 1/4 cup full fat coconut milk
- 1-2 tbsp. vanilla extract
- 3/4 cup cacao powder
- 1/4 cup arrowroot powder
- 3/4 cup coconut sugar
- 1 1/4 cup ground almonds
- 1 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. sea salt
- 1/4 tsp ground cinnamon
Instructions
- Preheat the oven to 190C, and lightly oil an 8" x 8" baking dish
- In a small bowl, stir together the flax or chia with the water (this process makes 2 vegan flax/chia eggs)
- Allow it to sit and thicken for about 10 minutes, stirring occasionally
- Add the beets to a blender and blend until they become pureed
- Add the flax/chia mixture and the remaining ingredients to the blender and blend well until smooth
- Pour the mixture into the prepared baking dish and smooth it evenly
- Place on the centre wrack of the oven and bake for 45-55 minutes
- Allow them to cool for 30 minutes before slicing them
- Enjoy straight away or store in the fridge or freezer
